For historians familiar with the work of Christopher Dyer, Barbara Harvey and Christopher Woolgar all contributors to the present book , that conclusion is inescapable: their earlier writings on food and diet are here supplemented and refined but not challenged. Historians may find greater novelty in the archaeological and scientific papers, but uncertainties of interpretation abound, and the editors accept that there are difficulties in integrating the different types of evidence. Fast food is a type of mass-produced food designed for commercial resale and with a strong priority placed on "speed of service" versus other relevant factors involved in culinary science. By making speed of service the priority, this ensured that customers with strictly limited time a commuter stopping to procure dinner to bring home to their family, for example, or an hourly laborer on a short lunch break were not inconvenienced by waiting for their food to be cooked on-the-spot as is expected from a traditional "sit down" restaurant. An impressive series of estimates of bread and ale production and consumption punctuate a concise analysis of dynamic patterns on either side of the Black Death, demonstrating how changing pressure on agricultural resources prompted shifts in consumption at every level of society. Vegetables, grown more intensively in towns than in the countryside, appear to have provided a higher proportion of food for the lowest levels of medieval society.
